Bread Making Hints

You can mix and match any of the mixes together in any proportions as long as the final amount does not exceed the weight of the chosen recipe.

You can add up to 4 tablespoons of grain to your recipe without changing the amount of flour or water eg 2 tablespoons soy grits and 2 tablespoons kibbled linseeds.

Always use Australian metric measuring spoons or cups NOT just any old spoon or cup.

To obtain an accurate measurement when measuring liquid you will find that 20 mls = 1 metric tablespoon and 5 mls = 1 metric teaspoon.

Always measure the liquid at eye level to get an accurate reading.

Ingredients may be put into your machine in any order EXCEPT when using your machine on time delaly, it is then necessary to separate the yeast from the water.

Fifteen minutes before the machine begins the cooking cycle you can lift the lid of your machine, spray the dough with water and sprinkle on sesame or poppy seeds being careful not to scatter them over the element.

If fruit is sticking to the outside of your bread, try adding 2 teaspoons of extra water OR wash the dry fruit in water before adding into the machine OR store dried fruit in the refrigerator.

If you use mixes or yeast other than those specified you will change the outcome of your finished loaf. Our mixes have been specially formulated for these recipes.

The oil can be left out as long as it is replaced by the equivalent amount of liquid.  The bread will not be as moist and dry out more quickly.

To keep your bread fresh leave the loaf to cool and wrap tightly in plastic wrap like a second skin.

During the summer months when the humidity is high an extra 1-2 tablespoons of liquid may be needed.

Keep your No Knead dry active yeast and natural improver in the freezer, it will stay both free flowing and fresh for up to 12 months.

Only use the recipes that come with your ingredients, if you use a yeast other than Simply No Knead yeast you will find that the outcome will not be the same as yeasts come in varying strengths.

To help you cut really straight slices of bread Simply No Knead has a bread slicer that will prove invaluable.
