Spelt flour can easily replace flour in any situation. BUT there are a couple of simple things to be aware of. We've noticed that about 10% less moisture is required when cooking with spelt compared to normal wheat flour. You may need to adjust the amount of water to ensure the best results. You can combine spelt with other flour. Spelt flour requires less mixing than normal bread bakers quality flour as the glutins are weaker. Set the bread machine on the fastest setting as most failures are caused by the spelt over rising and then collapsing before the heat is high enough to bake your bread.
1. Always weigh spelt flour with scales as it measures differently to wheat.
150 grams spelt flour is equivalent to 1 cup wheat flour
75 grams spelt flour is equivalent to ½ cup wheat flour
50 grams spelt flour is equivalent to 1/3 cup wheat flour
37 grams spelt flour is equivalent to ¼ cup wheat flour
2. Spelt flour comes as plain flour therefore you need to make it into Self Raising
Flour as required.
Add 2 teaspoons Baking Powder per 150 grams.
Add 1 teaspoons Baking Powder per 75 grams.
Always sift the flour twice to distribute the Baking Powder
thoroughly
3. Other helpful cooking information for measuring liquids
1 Tablespoon = 20ml
1 Teaspoon = 5ml
1 cup = 250ml
½ cup = 125ml
1/3 cup = 80ml
¼ cup = 60ml
4. When using wholemeal spelt flour use it with at least 50% white as well wholemeal is very heavy and quite strong in flavour.

6. To replace spelt flour with a bread mix in a recipe
Using a bread machine – replace the 500gms mix with 500gms spelt flour
ADD 1 teaspoon Natural Improver
1 teaspoon salt
1 teaspoon sugar(optional)
Everything else remains the same
Hand made bread – replace the 600gms mix with 600gms spelt flour
ADD 2 teaspoons Natural Improver
2 teaspoons salt
2 teaspoons sugar (optional)
Everything else remains the same
7. How to measure very warm water
Into a jug add 300mls cold tap water and 200mls of boiling water.
